Not sure about waffle irons, but you can make a nice omelet by putting eggs plus whatever else into plastic zip freezer bags and boiling them in a big sauce pan. Each person can add whatever he or she wants (cheese, mushrooms, cooked sausage, etc.), and it works out real well.

It sounds and looks so good that I am kind of bummed that it didn't work out. I wonder if it would work better if you sprayed the waffle iron before adding the dough. I might have to try it but I am terrified of ruining my waffle iron. I only ever use it to make waffles and wont even make chocolate chip waffles for fear that the chips will melt and stick.
